RECIPE STEPS

Peel the carrots and the onion.
Roughly chop the carrots, the onion and the celery.

Put the tuna, the anchovies, the capers and the vegetables into the metal bowl.
Add the white wine and 300ml water.
- 200 g tuna in olive oil
- 100 g anchovies in olive oil
- 1 tsp capers

Put the roast veal into the steamer basket. Season with salt and pepper the fit the basket in the metal bowl.
Run the program.

Set the meat aside for about 2 hours to cool.

Remove the broth from the metal bowl; leaving the vegetables, tuna, anchovies and capers.

Scrape down the wall of the ball and set aside.
Fit the food processing bowl with the mini bowl and its blade to prepare mayonnaise.

Put the ingredients into the mini bowl (just a drizzle for the oil) then run the program for about 20 seconds.
- 1 tbsp mustard
- 10 ml sunflower oil
- 1 pinch salt
- 1 pinch pepper
- 1 egg

Rerun the program.
While the machine is running, gradually pour the oil in through the opening and stop so that the mayonnaise can set.
Repeat the same process. When the mayonnaise is very dense, pour the remaining oil in a fine trickle without stopping then add the lemon juice.

Incorporate the mayonnaise in the metal bowl and run the program.
