200 g of wheat seeds

200 g of rye seeds

1 sachet of dry yeast (5 g)

1 tbsp of salt

50 g of sunflower seeds

300 ml of water

1 tbsp of honey

7 ml of yeast extract

Tips

Fennel, cumin, star anise and coriander are great spices to use for the spice mixture. The recipe can be varied using other spices and seeds such as sesame and pumpkin seeds. If the bread is baked in a tin, remove from the tin after 45 minutes and bake for another 5 minutes (without the tin) so it will brown.

Put all the grains into the metal bowl and run the program.
  • 200 g of wheat seeds

Pour 220ml water into the metal bowl and add the rest of the ingredients. Run the program.

Scrape down the wall of the bowl and run the program.

Leave the dough at room temperature for 4 hours.

Put the dough into the metal bowl with remaining 80ml water. Run the program.

Shape into a loaf and roll in sunflower seeds.
