100 g self-raising flour

5 g cocoa

5 g baking powder

30 g maple syrup

45 g butter, melted

45 g cream

30 g almond meal

2 whole free range eggs

5 ml whipped or clotted cream

30 g icing sugar

0.5 bunch mint

RECIPE STEPS

Put the following ingredients into the Cook Expert metal bowl with the whisk attachment– self-raising flour, baking powder, cocoa, almond meal, maple syrup, cream, melted butter, and eggs. Place the glass lid on and lock into place. Magimix: Baking press OK, Pasty/Cake press OK, Speed down to 4, Time to default 1:30 seconds. 60 seconds into cycle press STOP, take the lid off, and scrape down the ingredients using the Magimix spatula. Replace the lid and press AUTO to restart the mix cycle.

Remove the whisk attachment and use the spatula to remove excess mixture.

Pour mixture from the metal bowl into a separate bowl lined with a plastic piping bag. Remove the piping bag from the bowl and squeeze mixture to the bottom of the bag before using scissors to cut off a corner triangle measuring approx. 1.5cms. Pipe mixture into 4 glass pudding bowls, and place them into the Magimix steamer basket.

Put 500ml water into metal bowl, place steamer basket into the metal bowl of the Cook Expert and replace the glass lid ready to steam. Select the STEAM program and start.

Remove glass puddings from steamer basket, serve with whipped cream, garnish with mint, and dust with icing sugar.
