In the metal bowl equipped with the XL dough hook, pour in the flour, the frozen butter and a pinch of salt.
Run the program. During the kneading, pour the cold water in a thin stream through the opening of the lid.
- 500 g of plain flour
- 250 g of butter
- 1 pinch of fleur de sel
- 225 ml of water

On a floured work surface, work the dough to give it a regular shape of a dough piece.
With a rolling pin, roll out the dough to form vertical strips.
Fold the top of the strip to the center, fold the bottom of the strip like a sheet. Rotate the folded dough 90° and repeat the same rolling and folding operation 3 times.

Portion out 4 identical dough pieces, wrap them and store them in the freezer for later.
