300 g of prawns

0.5 tsp fresh ginger root

2 tbsp soy sauce

0.5 tsp sesame oil

1 white onion

130 g flour

80 ml warm water

1 pinch salt

1 tsp plain flour

1 tsp warm water

Tips

You can keep unused dough in the freezer for a month. Flour the dough lightly before stacking them, with rounds of parchment paper in between.

RECIPE STEPS

Sift the flour in the metal bowl. Remove the cap and run the program. Gradually add water through the opening while the program is running.

Check the consistency of the dough: if it is too sticky, add a little flour. If it is too dry, add a little water. The dough is ready when your finger leaves an imprint.

Place the dough on a floured work surface. Knead it for 30 seconds then cut it into 2.5 cm balls.

Fit the food processing bowl and the mini bowl. Shell the prawns and grate the ginger.

Pour the ingredients into the mini bowl and run the program for about 30 seconds.

If necessary, scrape down the wall of the bowl with a spatula. Rerun the program until the filling is fairly fine.

Roll out the dough balls (with a rolling pin) to make 8 cm circles (the circles should be almost transparent). If they become sticky, sprinkle lightly with flour.

Put 1 tsp of filling in the middle of each dough circle.

Brush the edge of the dough with the flour-water mixture. Fold the circular dough in half and press lightly on the edges to close it.

Repeat until there is no more filling left.

Pour 0.5L water into the metal bowl and fit the steamer basket.

Line the steamer basket with parchment paper and brush with oil.

Place the raviolis into the steamer basket and run the program.

For best results, cook the ravioli in batches (to avoid overloading the basket).

Serve with soy sauce.
