3 small potatoes peeled

2 tbsp of olive oil

2 spring onions

2 tbsp of roughly chopped chives

10 large eggs

100 g of goat cheese

1 pinch of sea salt

1 pinch of freshly ground black pepper

RECIPE STEPS

Preheat the oven to 220°C. Spiralize the potatoes using the SPAGHETTI cone. Cut into shorter lengths.

Heat the olive oil in a large frying pan over medium-low heat. Cook the spaghetti for 10 minutes, stirring occasionally. Stir in the spring onions and chives.

Whisk the eggs with ½ tsp salt and ½ tsp pepper. Pour the mixture over the spaghetti and stir a couple of times to evenly spread the mixture out; dot with small pieces of goat cheese.
