400 g frozen pineapple

50 ml coconut milk

125 g plain yoghurt

75 g caster sugar

Mash the pineapple into a purée If you prefer smooth ice creams, you can then sieve the purée to remove all the fibres.

Stir the purée into the cream, combining the mixture well.

Add the vanilla essence and check to make sure that the mixture is sweet enough.
