1 tsp of ground ginger

1 tsp cumin

1 tsp ground turmeric

1 pinch salt

1 pinch pepper

1.5 tbsp fish sauce

1.5 tbsp olive oil

1 spring onion

75 g green pepper

1 red chilli

1 egg

500 g of cod

2 sticks of lemongrass

Tips

If the consistency seems too runny, add some bread crumbs. If you' e having trouble getting lemongrass, you can replace it with organic lemon zest.

RECIPE STEPS

Remove the outer leaves of the lemongrass and discard the tough base. Slice the soft inner core and set aside.

Wash, deseed and quarter the chilli and green pepper.

Fit the food processing bowl with the metal blade. Add the lemongrass, chilli, pepper and onion; run the program for about 30 seconds.

Roughly chop the cod and add it in with the other ingredients. Mix for 1 minute by running the program.

Empty the mixture into a bowl and shape into balls. Flatten gently with your hand to form patties (3 to 4 cm in diameter).
