100 g of fruit mince

500 g of cream

250 g of milk

85 g of sugar

1 pinch of salt

6 egg yolks

2 tsp of vanilla extract

RECIPE STEPS

Place cream & milk in a saucepan and gently heat until hot, but not boiling.

In a bowl, whisk together the sugar, egg yolks, salt & vanilla

Add hot milk mixture to egg mixture, whisking as you go.

Cool in fridge until completely chilled.

Pour the mixture into the Gelato Expert and run the ICE CREAM function

Approximately 40min into cycle, add the fruit mince.

Serve with crushed shortbread biscuit or in waffle cones (optinal).

Can be placed in freezer for a firmer consistency.
