5 medium onions

50 g salted butter

3 leaves bay leaves

4 stalks sprigs of thyme

2 garlic cloves

100 ml white wine

700 ml vegetable or chicken stock

1 pinch pepper

2 tsp yeast extract (optional)

75 g of gruyère

75 g parmesan

8 Crusty Bread

RECIPE STEPS

Start by using the midi bowl of the food processor to grate the cheese with the G2 grating disc.

Then use the large bowl and the S2 slicing disc to slice all the onions for the soup.

Put the sliced onions and the butter into the metal bowl. Run EXPERT 30:00/speed 2A/115°C. Remove the cap.

Add the bay leaves, thyme, garlic, and white wine. Run EXPERT 10:00/speed 1A/115°C. Remove the cap.

Add the stock, pepper, and malt yeast extract. Run SIMMERING 30:00/speed 0/110°C.

Toast the bread. Then rub with the garlic clove. Top with the grated cheese and sprinkle with thyme. Grill for 3 minutes or until the cheese is bubbling and melted.
