
French onion soup




100 ml white wine
1 tbsp plain flour
1 pinch salt
1 pinch pepper
50 g butter
1 L hot water
5 large onions
1 chicken broth
100 g of Comté cheese
4 slices slightly stale farmhouse loaf
1.5 tbsp olive oil
1 tbsp basil
1 tbsp thyme
1 tbsp chives
150 g grated cheese
1 pinch salt
1 pinch pepper

To make a curried onion soup; add 1 tbsp curry powder and/or ground turmeric. Replace the Gruyère with gouda and make the croutons using coriander.

There is no way the onions will brown or caramelise in 3 mins. This recipe does not work produce French Onion Soup if you follow the instruction at Step 2 - I tried it - you end up with a strong tasting onion soup. There is discussion about this on the Magimix Australian Facebook group. I will try again but using the stir fry function at an higher heat to caramelise the onions.
