200 g of butter

170 g of sugar

150 g of ground almonds

60 g of plain flour

1 pinch of salt

5 egg whites

1 tsp of bitter almond extract

RECIPE STEPS

Melt the butter in a small saucepan over medium heat, until it turns a nutty brown colour. Leave it to cool for 5 minutes.

Mix the sugar with the ground almonds, flour and salt in the bowl fitted with the metal blade. Let the machine run.

  • 150 g of ground almonds
  • 60 g of plain flour
  • 1 pinch of salt

Pour the egg whites (not whisked), melted butter and almond extract through the opening. Mix the dough for a further 15 seconds. If necessary, scrape down the wall of the bowl with a spatula.

  • 1 tsp of bitter almond extract

Refrigerate the dough for about 1 hour. It must harden.

Preheat the oven to 180°C. Using a piping bag, fill the silicone financier moulds 3/4 full. Smooth the dough into the moulds.

Bake the financiers for about 20 minutes. The edges should be lightly coloured.
