RECIPE STEPS

Melt the butter in a small saucepan over medium heat, until it turns a nutty brown colour.
Leave it to cool for 5 minutes.

Mix the sugar with the ground almonds, flour and salt in the bowl fitted with the metal blade. Let the machine run.
- 170 g of sugar
- 150 g of ground almonds
- 60 g of plain flour
- 1 pinch of salt

Pour the egg whites (not whisked), melted butter and almond extract through the opening. Mix the dough for a further 15 seconds.
If necessary, scrape down the wall of the bowl with a spatula.
- 200 g of butter
- 5 egg whites
- 1 tsp of bitter almond extract

Refrigerate the dough for about 1 hour.
It must harden.

Preheat the oven to 180°C.
Using a piping bag, fill the silicone financier moulds 3/4 full.
Smooth the dough into the moulds.

Bake the financiers for about 20 minutes.
The edges should be lightly coloured.
