RECIPE STEPS

Place milk, cream & chocolate in a saucepan. On medium, heat until chocolate has melted & well combined.
- 375 ml of full fat milk
- 125 ml of thickened cream
- 120 g of dark chocolate

Place egg yolks & castor sugar in a bowl & whisk to combine.
- 5 egg yolks
- 50 g of castor sugar

Whisk milk mixture in to egg mixture. Once combined return to saucepan. Heat on low heat until thick enough to coat the back of a spoon.

Return to mixing bowl, cover and refrigerate until cold (at least 2 hours).

Place mixture into Gelato Expert, as per instructions. Set on Gelato function & leave until light flashes.

Serve immediately or place in a freezer safe bowl & freeze for a firmer consistency. Will keep in the freezer for at least 2 weeks.
