50 g of sugar

400 g of watermelon flesh

Tips

You can make several delicious variations to this sorbet: - For a creamy fig sorbet, replace the watermelon flesh with fig flesh. Adjust the amount of sugar according to your taste. - For a creamy peach sorbet, replace the watermelon flesh with peeled and pitted peaches. Adjust the amount of sugar according to your taste. - For a creamy melon sorbet, replace the watermelon flesh with ripe melon flesh. Add 50g of sugar to the melon juice. - For a soy milk sorbet, replace the whole milk with soy milk.

RECIPE STEPS

Place the pieces of watermelon (remove the seeds, if desired) into the bowl of a blender or food processor. Blend the watermelon to make a thick juice. Add the sugar to 125ml of the watermelon juice and mix.

Pour this mixture into a saucepan and heat. Stir until the sugar has dissolved, then remove from the heat and leave to cool.

When the watermelon syrup has cooled, return it to the blender or food processor bowl containing the rest of the watermelon juice. Add the milk and blend until a smooth mixture is obtained.

Place the mixture into the fridge until it is cold.

When the light flashes, your sorbet is ready. Serve your sorbet immediately or store it in the freezer.
