60 g breadcrumbs

300 g crab meat

1 tbsp Dijon mustard

5 sprigs flat parsley

2 tbsp mayonnaise

1 pinch salt

1 tsp pepper

40 g butter

2 tbsp vegetable oil

2 eggs

1 tbsp Worcestershire sauce

3 tbsp mayonnaise

1 tbsp water

2 cm grated ginger

In a small bowl, mix the mayonnaise, water and grated ginger.
  • 3 tbsp mayonnaise
  • 1 tbsp water
  • 2 cm grated ginger

Fit the food processing bowl with the metal blade.

Add half the breadcrumbs and the following ingredients. Season and run the program for 30 seconds.
  • 60 g breadcrumbs
  • 300 g crab meat
  • 1 tbsp Dijon mustard
  • 5 sprigs flat parsley
  • 2 tbsp mayonnaise
  • 1 pinch salt
  • 1 tsp pepper
  • 2 eggs
  • 1 tbsp Worcestershire sauce

Refrigerate the mixture for 30 minutes.

Shape the mixture into balls (moisten your hands and/or add a few breadcrumbs to the mixture to make it easier) and roll the balls in the remaining breadcrumbs. Gently press down on each one to form croquettes 3-4cm in diameter.
  • 60 g breadcrumbs

Heat the oil and butter in a frying pan and cook the croquettes for 3 minutes on each side, until golden.

  • 2 tbsp vegetable oil

Serve immediately on kitchen paper with ginger mayonnaise on the side and a small baby leaf salad.
