100 g couscous

200 ml water

4 tsp Bitton Chilli Oil (or other good quality chilli oil)

50 g butter

2 large tomatoes, deseeded

1 mango, peeled and diced

1 Onion Salsa

1 bunch bunch coriander leaves only

2 tbsp Bitton Lemon Dressing (or other good quality vinaigrette) to taste

1 tsp Baby herbs to garnish to taste

1 medium brown onion

1 medium red onion

4 spring onion or green shallots

0.5 bunch flat leaf parsley, leaves only

50 ml vinaigrette

RECIPE STEPS

Place the water, butter and Bitton Chilli Oil in Cook Expert bowl. 3 minutes, 140 degrees, 1A.
  • 200 ml water
  • 4 tsp Bitton Chilli Oil (or other good quality chilli oil)
  • 50 g butter

Place couscous in a bowl, pour over water mixture, cover with cling film and set aside.
  • 100 g couscous

Assemble the food processor main bowl. Put all ingredients for the onion salsa and PULSE three times or until chopped. Set aside.
  • 1 medium brown onion
  • 1 medium red onion
  • 4 spring onion or green shallots
  • 0.5 bunch flat leaf parsley, leaves only

Assemble the mini bow and mini blade. Place tomatoes in the mini bowl. Pulse x 2.
  • 2 large tomatoes, deseeded

Combine prepared couscous, tomatoes, mango, coriander and onion salsa.

Drizzle over the vinaigrette or Bitton Lemon Dressing, combine well.
