125 ml water

120 g sugar

15 g fresh ginger

400 ml coconut water

8 g mint leaves

Tips

You can make several delicious variations to this granita: For a coconut, ginger & rum granita: remove the mint, divide the amount of water by two and add 40ml of white rum. For a pineapple, ginger & mint granita: replace the coconut water and sugar syrup with 1 litre of pineapple juice. Add the grated ginger and finely chopped mint.

RECIPE STEPS

Add the sugar, water and ginger (peeled and roughly chopped) into a saucepan. Bring to a boil to make a syrup.
  • 125 ml water
  • 120 g sugar
  • 15 g fresh ginger

Leave to cool completely then remove the pieces of ginger.
  • 400 ml coconut water
  • 8 g mint leaves

Place the mixture in the fridge until it is cold.

Press the Granita mode. Pour the mixture into the Gelato Expert.

When the light flashes, your granita is ready. Serve your granita immediately or store it in the freezer.
