1 lemon

3 garlic clove

1 pinch pepper

200 ml olive oil

100 ml semi-skimmed milk

1 onion

1 kg salt cod

Tips

Contrary to popular belief, an authentic brandade does not include potatoes. However, there is no reason why it cannot be served with mashed potatoes. For a quicker version, use cod fillets.

RECIPE STEPS

Place the salt cod in a large ovenproof dish or salad bowl and cover with cold water. Soak for 24 hours, changing the water at least 4 or 5 times, to remove the salt.

Then, rinse the fish under cold running water, cut it in pieces, place in the metal bowl and cover with cold water. Run the program.

Once the cod is cooked; drain it, remove the skin and bones, and then roughly flake the flesh using a fork. Clean the metal bowl. Quarter the onion and place, with the garlic cloves, into the metal bowl. Run the program.

Run the program. Pour the olive oil through the cap opening, and gradually add the warm milk until the mixture is smooth. Season with pepper but do not add salt.

Juice the lemon. Add the nutmeg and lemon juice. Serve with homemade mashed potatoes.
