RECIPE STEPS

Using a peeler, take the zest of the citrus fruits. Immerse the zest in boiling water, leave for about 45 seconds then drain and cool.

Cut a few of the zests into strips and finely chop the rest.

Squeeze the citrus fruits and strain the juices.

Whisk the egg yolks, salt, sugar, chopped zest and agar-agar.
Pour in the boiling milk, stirring constantly, and add the citrus juices. Return everything to the saucepan.

- 500 ml milk
- 125 g sugar
- 0.5 tsp agar agar
- 1 pinch rock salt
- 0.5 lemon

Cook the mixture gently, stirring constantly, until it is thick enough to coat your spatula. Pour the mixture into a bowl, cover with cling film and leave to cool for 2 hours in the fridge.

Pour the mixture into the Gelato Expert and run the Gelato/ Italian ice cream mode.

Serve immediately or transfer into a container to store in the freezer (-15°C).

Serve the ice cream garnished with diced citrus segments and strips of zest.
