3 egg yolks

60 g sugar

50 g brown sugar

150 g dark chocolate

285 ml double cream

Pour the cream into the ramekins. Cool at room temperature then refrigerate for 2-4 hours.

Just before serving; sprinkle with sugar and caramelise using a blowtorch, or under a preheated grill.
