6 tbsp of olive oil

6 tbsp of lemon juice

4 small pears

3 bunches of cress

2 stalks of celery

150 g of french blue cheese

50 g of almonds

1 pinch of sea salt

1 pinch of freshly ground black pepper

In a bowl whisk the olive oil and lemon juice to combine; season.

Spiralize the pears using the SPAGHETTI cone. Cut into shorter lengths.

Remove and discard any thick cress stems; toss the cress in the dressing. Season and carefully fold in the celery and blue cheese. Serve topped with the almonds.
