450 g of syrup pears

1 tbsp of cocoa

In the metal bowl, place the whisk and pour in the egg whites. Run the program.

Reserve. Put the egg yolks, sugar, and mascarpone in the metal bowl. Run the program.

Gently mix this preparation with the reserved egg whites.

Put the chocolate and the butter cut into pieces in the metal bowl. Run the program.

Cut the pears into cubes.
  • 450 g of syrup pears

In a glass, put a layer of speculoos (1 tbsp), a layer of pears (1 tbsp + 2 tbsp of pear juice), a layer of chocolate, then a layer of mascarpone mousse. Repeat the operation (without the juice).

Place in the refrigerator for a minimum of 2 hours (ideally 12 hours).
