Fit the food processing bowl along with the midi bowl and 4mm slicing disc.
Wash the aubergines then slice them using the program.

Place the slices on a dry cloth and let it dry.
Slice the mozzarella in the bowl also using the program.

Cut in 2cm strips. Set aside.
Fit the 2mm grating disc and grate the parmesan using the program.

Set aside.
Roll the aubergines slices in flour and fry them in a frying-pan using a lot of oil until beautifully golden.
Place them on kitchen towel to remove the oil excess.

Heat your oven to 180 °C.
Spread a little tomato sauce in an ovenproof dish, sprinkle with grated parmesan, arrange a layer of fried or grilled aubergines.
Add the pieces of mozzarella and repeat 2/3 times.
End with a layer of tomato sauce and grated parmesan.

Bake in oven for 40 minutes.
The top must be lightly coloured.
Enjoy hot or cold.
