150 g plain flour

150 g sugar

60 g butter

4 eggs

400 g vanilla ice cream

100 g of strawberry coulis

RECIPE STEPS

Lay out a large sheet of baking paper and place the ice cream lengthwise in the middle of the paper. Shape the ice cream into a cylinder / sausage shape and freeze for at least 1 hour.

Preheat the oven to 180°C. Melt the butter. Put the eggs and sugar in a bowl and heat it in a bain marie, continuously whipping, for 3 minutes.

Pour the hot mixture into the bowl fitted with the whisk. Whisk until the mixture holds its shape.

Pour into a bowl and add the sifted flour. Very gently mix and then incorporate the melted butter with a hand whisk, pouring it in a slow stream.

Pour the batter into the lined tin, rocking it gently to get an even layer at the corners. Bake for about 15 minutes, until the sponge cake is lightly golden and springy to the touch.

Let the sponge cake cool for a few minutes, then remove it from the tin and use the baking paper (still hot) to help you roll the sponge cake, starting from the longest edge. Roll it up in a clean cloth and then leave it to cool.

Unroll the sponge cake and spread over the strawberry coulis. Transfer the vanilla ice cream into the centre and then roll it up on itself. Return to the freezer until ready to serve.
