500 g apricots

400 g jam sugar

Tips

Depending on the season, the sugar content of fruit increases causing the jam to foam up during cooking; if so, watch carefully.

RECIPE STEPS

Put the stoned apricots into the metal bowl; add the sugar and the lemon juice. Remove the cap from the lid and run the program.

  • 500 g apricots
  • 400 g jam sugar
Expert 25:00 / 2A / 105°C

Put a drop of jam on a chilled plate, if it sets then the jam is ready. If not, rerun the program.

Use sterilised (or previously boiled) jars. Ladle the hot jam into the jars and tightly close the lids. Turn the jars upside down on a rack for about 15 minutes.

Turn the jars into the upright position and set aside to cool.

I finished mine on the stove. I did do double quantities and should possibly have just done longer in the machine. Nice to get light colour. if I do again I'd possibly see how I went with less sugar too. I like less chunky, I cut into quarters but thought maybe the machine would mash fruit more. Again I could have increased speed at end. Wonderful to not have to worry about tending the put on the stove though.
