Wash and drain the quinoa by lining the colander with cheesecloth or absorbent paper: the grains are very small and pass through the holes of a colander.

Pour the water into the steamer's tank and add the bouquet garni. Put the lid on.
Cook for 10 minutes, turn off, let it infuse for 5 minutes.

Line the steamer basket with gauze or aluminum foil and place the quinoa in it, put the lid on. Cook for 35 minutes. The small grains should have doubled in volume and released their white germ.

Drain. Put the grains and cornstarch (Maïzena®) in the food processor, add water through the feed tube until it forms a smooth dough that is easy to work with. Shape the gnocchi with your fingertips. Place in the steamer basket, put the lid on, and cook for 15 minutes.

Serve hot, accompanied according to taste with soy sauce or tomato sauce.
