Quick coq au vin




1 brown onion, sliced
1 cloves garlic, crushed
2 tbsp olive oil
25 g butter
150 g bacon, diced
10 chicken thighs
20 g plain flour
2 tbsp of tomato purée
2 carrots, diced
200 g Swiss brown mushrooms
350 ml chicken stock
350 ml red wine
1 leaf bay leaf
3 stalks fresh thyme sprigs
1 pinch salt
1 pinch pepper
1 kg Steamed baby potatoes
1 handful Chopped flat leaf parsley to serve, optional

I cooked this during the cookalong. I just increased the final cooking time by 12 minutes. It was simply beautiful. my husband and I both loved this dish 😋
