Pineapple Chicken




2 tsp olive oil
1000 g chicken thighs
1 red capsicum
2 pinches salt
1 pinch pepper
440 g can pineapple slices cut into pieces (reserve juice for sauce)
1 tbsp minced garlic
1 tsp of ginger
60 ml salt reduced soy sauce
80 ml cup salt reduced chicken stock
80 g hoisin sauce
60 g of light brown sugar
2 tbsp corn flour
500 g rice
1 pinch of seasame seeds
1 spring onion
