Zest your lemons with a sharp peeler. Boil some water in a saucepan and blanch your zests.
Discard the water and repeat the operation twice. Reserve the blanched zest.

Squeeze the lemons then reserve the juice and the pulp, without the seeds.
Pick and wash the fresh mint.

Put the juice, pulp, lemon zest, mint, liquid sugar and cold water in the metal bowl.
