Chicken Coleslaw with a Twist




Kettle to boil water
0.25 red cabbage
0.25 green cabbage
2 carrots
200 g bacon, diced and fried
2 green shallots, thinly sliced
250 g grated parmesan
125 g almond flakes (optional)
500 g chicken tenderloins
2 tbsp Dijon mustard
1 tbsp white vinegar
1 egg yolk
250 ml sunflower oil
125 g of Greek yoghurt
2 tbsp apple cider vinegar
83 g flat leaf parsley, chopped
