3 tbsp olive oil
1.2 kg chuck steak
1 tbsp salt
2 tsp pepper
4 tsp korma curry paste
400 ml coconut milk
1 sweet potato
1 handful cshew nuts
1 tbsp coriander
100 g rice

Heat oil for I min on Saute program. Season beef with salt & pepper. Brown beef in batches.

Place onion, garlic & ginger in the Cocotte. Saute for 5min.

Add korma paste & saute for 2min until fragrant, then add coconut milk & bring to the boil.

Add beef, stir & place on lid. Place on Simmering program, 110 degrees, for 3 hours.

Add diced sweet potato and cook for a further hour. Simmer with the lid off for the last 30minutes if sauce needs thickening. Beef is ready when tender & falling apart.
